This is THE brownie recipe that we use at Via Gelato to make dark chocolate fudgy brownies with a deep complex chocolate flavor. They are unanimously voted as better than box mix brownies.
Preheat oven to 325 degrees F
Line a half sheet pan baking tray with parchment, spray cooking spray on top
Melt butter in a glass bowl microwave at power level 5 for 5 minutes
In a separate bowl beat the eggs until they are homogenous (no gloopy clumps of white)
Pour your eggs into the main bowl and mix everything together
Whisk together melted butter, oil, brown sugar until smooth
Add the cocoa powder, flour and cacao nibs if using
Pour into your pan
Bake until done to your liking (brownies continue to bake after you take them out and will not come out clean to a poke test) ~30 minutes at 325 degrees.
